Chef Ivan brings his Latin roots to the menu introducing new dishes with vibrant bold flavors

MIAMI, March 7th, 2024 – Miami’s iconic waterfront destination, Amara at Paraiso by James Beard award winning Chef Michael Schwartz is growing this year. The team is thrilled to welcome Chef Ivan Barros as he takes on his new role as Executive Chef of Amara at Paraiso. The Miami native is making a comeback to his hometown as he brings his extensive background and Latin roots to the menu. Since his appointment, Amara at Paraiso has been introducing new and exciting bold flavors while following Chef Michael’s philosophy on sourcing fresh and seasonal ingredients.

Chef Ivan started his culinary career in the magic city where he quickly climbed his way up froma quick-service Mexican inspired concept to one of Miam’s famed fine-dining Italian restaurants. After graduating from Le Cordon Bleu College of Culinary Arts, he was a line cook at Lime Fresh Mexican Grill and then hired as Chef de Partie for Scarpetta at The Fontainebleau. While there, he worked under James Beard finalist, Chef Mike Pirolo and James Beard award winning Chef, Nina Compton. For his next venture, Barros took his talents to NYC to be the corporate Sous Chef for Scott Conant. Later on, Barros reunited with Pirolo at his Brooklyn restaurant, The Saint Austere and assisted Compton while she debuted Compère Lapin in New Orleans. He then spent seven years in Los Angeles where he was the Chef de Cuisine at Alimento and opened Vamo Vamos in Santa Monica.

Chef Ivan is thrilled to return back to his native city and work alongside a driving force in the restaurant scene, Chef Michael Schwartz.“Schwartz has been carving a culinary landscape for more than 25 years, he’s built meaningful relationships within the community and cares about this city,” shared Barros.” As a homage to his Dominican Republic roots, he shared, “My goal is to focus on Latin American flavors and coastal ingredients while elevating the cuisine but also making it approachable.”

Among Chef Ivan’s favorite new dishes are the Heirloom Tomatoes (18) that are locally grown in the Redlands, Borek Farms. The ingredients truly shine as it’s dressed with a Peruvian aji amarillo, homemade salsa macha and topped with toasted pumpkin seeds (vegan and gluten-free). Other highlights include his ode to Peru like the Half Chicken a La Brasa featuring heritage poultry sourced from Joyce Farms served with crispy smashed potatoes, aji Verde and pickled onions (39), Hamachi Tiradito drizzled with lulo vinaigrette, crispy malanga, cilantro oil and served with choclo (27), Moqueca, known as Brazilian fish stew, steamed with prawns, cobia, octopus, coconut milk and rice (52) and a Masa Honey Cake served with roasted pineapples, honey, tajin and coconut cream. By Summer 2024, guests can expect 70% of the dishes to change which will feature a new innovative twist by Barros.

In theme of the updated menu, Amara at Paraiso has also introduced avant garde cocktails inspired by their waterfront surroundings and ingredients from South and Central America. Libations include a signature Amara Tiki Punch mixed with ArteNOM 1579 tequila blanco, rum, lulo citrus, housemade falernum, grenadine, pineapple and a dash of cinnamon (27) Monkey Business served in a Florida Coconut filled with Wyoming bourbon, appleton 12yr rum, plantation o.f.t.d. rum, homemade spiced banana syrup, lemon and pineapple (32), and an Andean Spirit which is a journey through the Andes highlighting the region’s native ingredients shaken with vodka, coca leaf liqueur, green chartreuse, mora fruit, lavender, tangerine and lime (20). The wine program is also incredibly diverse with a special focus on South American and Mexican Wines (available by the glass and bottle).

Amara at Paraiso is located at 3101 NE 7th Ave, Miami, FL 33137. The restaurant is open for lunch Monday through Friday from 12 until 4pm and dinner daily starting at 5:00pm.
